Super Chocolate Chunk Cookies with Sea Salt
Makes ~ 20 Cookies

2 1/2 c all-purpose flour
1/2 c cocoa powder
1/2 tsp baking soda
1/2 tsp sea salt
1 1/2 c packed light brown sugar
1 1/2 c sugar
1 c + 3 tbsp unsalted butter, room temperature
2 large eggs
150 – 175 g milk chocolate bar, chopped into chunks
Flakey sea salt for topping
- In a large bowl, mix the flour, cocoa powder, baking soda, and salt. You can use an electric mixer but I don’t have one so when I make cookies I mix ingredients with a fork or whisk by hand.
- In a separate, medium bowl, beat or whisk the sugars and butter until combined. Then add the eggs one at a time and continue to combine. Once combined, add the wet ingredients into the dry and combined. Then add the chocolate chunks and gently fold into the batter.
- On a baking sheet or tray that will fit in your refrigerator, roll the dough into golf ball sized balls, cover with plastic wrap and chill for at least 30 minutes, preferably 1 – 2 hours. Meanwhile preheat the oven to 350 F.
- When ready to cook, place the chilled cookies on a parchment lined baking sheet about 2 inches apart, top with flakey sea salt, and bake for 17 – 20 minutes. You’re looking for cooked edges, soft centers. Let cool and ENJOY.
