Traditional Cretan Salad

Makes one medium salad


2 medium tomatoes

1/2 cucumber

1/2 red onion

1 tbsp (15g) capers

1 large piece good quality feta (6 – 7 oz or about 170 g)

3 large rusks (or rusks)

Dried oregano

Good quality olive oil

Sea salt, pepper and vinegar, if desired


  1. Break the rusks into pieces and add to the salad bowl.
  2. Chop the tomatoes into medium pieces, and slice the cucumber and onion. Add to the bowl.
  3. Add the large piece of feta on top, add the capers. Sprinkle with oregano.
  4. Dress with a generous helping of olive oil. Mix a bit and then add any salt, pepper or vinegar to taste. If your feta is very salty you may not need any salt.
